Another reason we love these-they are perfect to make with your kids! An older child can make these independently, but even a toddler can do most of this work! If you are looking for another great cookie recipe to make with kids (but slightly less healthy), check out cake-mix cookies!

Easy Banana Oatmeal Cookies Recipe:

Ingredients:

– 2 ripe bananas

– 1 ½ cups rolled oats

– Pinch of salt

– 1 large egg

– ½ cup chopped nuts (walnuts, pecans, or almonds work well)

-Chocolate chips (optional. This does add in “added” sugar!)

Instructions:

1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

2. In a mixing bowl, peel the ripe bananas and mash them using a fork until smooth. Really make sure that they are mashed well!

3. Add the rolled oats to the mashed bananas. Really, any sort of oats will work here! Quick oats will give you a bit more of a “flour like” texture. Old-fashioned oats (rolled) will give you a distinct oatmeal feel that leans more chewy.

4. Crack the egg into the bowl and sprinkle in a pinch of salt for flavor balance.

5. Stir the ingredients together until well combined. The mixture should be thick.

6. Gently fold in the chopped nuts of your choice. Nuts add a delicious crunch and extra nutrients to the cookies. Pro Tip: I love my OXO Chopper for these like this! It’s perfect for chopping these like nuts, which tend to love to roll around your cutting board!

7. Using a spoon or your hands, scoop out small portions of the dough and place them onto the prepared baking sheet, leaving some space between each cookie.

8. Flatten each cookie slightly with the back of a spoon or your fingers. These cookies won’t spread much during baking, so shaping them beforehand will give them their final appearance.

9. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown on the edges.

10. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

11. Serve and enjoy these wholesome banana oatmeal cookies as a snack, dessert, or even a quick breakfast on the go!

Tips:

– Make sure to use ripe bananas for the best flavor and sweetness. The more ripe the better!

– Feel free to customize your cookies by adding in extras like chocolate chips, dried fruit, or a sprinkle of cinnamon.

– Store any leftover cookies in an airtight container at room temperature for up to 3-4 days, or freeze them for longer storage.

With just a handful of simple ingredients, you can whip up a batch of these irresistible banana oatmeal cookies in no time. Whether you’re following a gluten-free diet or simply looking for a healthier alternative to traditional cookies, this recipe is sure to become a favorite in your household. So go ahead, indulge your cravings with these delicious treats!
