Turkey Soy Chili

  • 1/2 c boiling water
  • 1/3 c textured soy protein (TSP)
  • 1/3 lb ground turkey breast
  • 1/2 c onions, chopped
  • 1/2 c green peppers, chopped
  • 1/4 tbsp garlic, minced
  • 1/4 tbsp soybean oil or vegetable oil
  • 1 tbsp plus 2 tsp canned diced tomatoes, including liquid
  • 1 c canned tomato sauce
  • 2 tsp canned green chilies, diced
  • 2-1/3 tsp chili powder
  • 1/3 tsp salt
  • 1/4 tbsp jalapeño peppers, minced
  • 2 c water



In a large bowl, pour boiling water over soy protein. In a 14-quart pot, sauté turkey, onions, peppers and garlic in oil over medium high heat until turkey is no longer pink. Add rehydrated soy protein and remaining ingredients. Bring to a boil, reduce heat and simmer uncovered for 45 minutes. Serve with assorted condiments such as shredded, low-fat Cheddar cheese, yogurt, sour cream and/or minced onion. Makes 4 servings.


Notes: This recipe is hearty and delicious, yet healthy and packed with protein. It includes textured soy protein (TSP), which is made from soy flour and usually used as a meat replacement. It can be found in natural food stores or the health foods section of your local grocery store.
