Pumpkin Pie Squares


For the crust

  • 1 box of yellow cake mix, 1 c reserved
  • 1 egg
  •  ½ c butter, melted

For the filling

  •  3 c (1 lb. 14 oz) Libby’s pumpkin pie mix (not pumpkin puree)
  •  2 eggs
  •  ⅔ c milk

For the topping

  • 1 c reserved cake mix
  • ¼ c brown sugar
  • 1 tsp cinnamon
  •  ¼ c butter, melted



Preheat oven to 350 degrees and spray a 13 x 9 inch baking dish with non-stick cooking spray. Combine the ingredients for the crust and press into the bottom of the pan. Combine the ingredients for the filling and pour over the crust. Combine the ingredients for the topping and sprinkle over crust. Bake at 350 degrees for 45 to 50 minutes.
