Chicken Apple Kabobs

Chicken Apple Kabobs


Ingredients

  • 1 boneless, skinless chicken breast
  • 1 granny smith apple
  • 1 red bell pepper
  • Pinch of salt and pepper
  • 2-3 tablespoons olive oil

Directions

Cut chicken, apple and bell pepper into equal, bite sized pieces. Place skewer through one piece of apple, then one piece of chicken and one piece of pepper.

Pour oil in small sauté pan and heat to medium high heat. Sauté kabob for 3 minutes on both sides then transfer to over and bake for 350 degrees for 10 minutes.

Serve with rice, or with a sweet balsamic glaze.

 


Mini Apple Pies 

 

Ingredients

  • 1 package filo dough
  • 1 can apple pie filling (or make your own)
  • Whipped cream

 

Directions

Fill filo dough with apple pie filling and bake at 350 degrees for 5 minutes then allow to cool and apply whipped topping.

 


Caramel Apple Sundae 

 

Ingredients

  • 1 half of granny smith apple, diced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 6 ounces vanilla bean ice cream

 

Directions

In small saucepan, over medium-high heat, sauté apples in 2 tablespoons butter until golden brown. Add 2 tablespoons brown sugar and mix until a smooth, caramel color. Add 1 tablespoon vanilla ice-cream and mix into caramel sauce. Pour over favorite vanilla ice-cream and enjoy.
